A more sustainable food diet:
Instead of developing such a rigid EcoChallenge, I have decided to challenge myself by creating a challenge that can be maintained long term The idea is that if I can come up with some good solutions in two weeks, I will hopefully stick with them for good. Even more importantly, this challenge will increase my own health as well as the health of our environment.
I will cut out the purchase and consumption of the following:
1. Any animal products that are not raised locally, organically, and ethically.
2. Any food products that are 'processed' meaning: food which has been chemically altered through additives such as flavors, flavor enhancers, binders, colors, fillers, preservatives, stabilizers, emulsifiers, etc., or which has been manufactured through combination or other methods.
3. Avoid products that are not grown or distributed organically, locally, seasonally or with a low ecological footprint.
I will still be eliminating coffee from my diet during the EcoChallenge.

So I woke up this morning and my good friend Chris, who was staying at my house, made me and his son breakfast. Biscuits and Gravy. What a wonderful gesture! Too bad the biscuits were from a can, and the sausage in the gravy was probably from a factory farm. The milk in the gravy was not organic, and neither was the orange juice. OK this is where I draw the line. There is no need for me to refuse to eat his food that I had no influence in making. Even more appalling would be to let it go to waste after all that energy from the planet and my friend Chris went into its production. What the EcoChallenge did provide in this case was an opportunity to share knowledge with a friend about eating practices and how they affect our planet. Now he has gone back with this knowledge and will hopefully spread that knowledge to his son as he gets older. In addition, Chris has donated $250 to my cause! So I think he has made up for it! Thanks Chris for having such an open mind and setting such a good example to your son.
