Be More With Less EcoChallenger

As I live with less, the excess in my life really stands out. I used to think I was doing the earth a favor by recycling, but trash is still trash.
I will stop using paper towels, plastic bags and bottles and any packaged food during my EcoChallenge.

- I can't believe how wasteful I was paper towels. I used them for everything. Almost every day of the challenge, I've reached for them and then caught myself. This is a habit that will be forever changed.

- This morning I am preparing my favorite green juice. It's the perfect solution to avoiding packaged and processed foods. Here's the recipe:
1 carrot
5 -10 celery stalks
1/2 cucumber
1/2 apple
bunch of kale
bunch of rainbow chard
1 whole lemon
chuck of ginger
Put it all through the juicer and enjoy!

- The best thing so far about participating in the EcoChallenge is awareness. Everyday I am thinking about my consumption habits.
While the packaging on most processed food is a problem, the food itself is just as destructive. I just heard a statistic that the average American diet is comprised of 60% processed foods, 30% Animal products, 5% grains and 5% fruits & vegetables.
Most diseases are completely preventable and even reversible with a change in diet.

- I am so excited about living with less for the next 2 weeks. I am not even a little concerned about giving up plastic water bottles, bags or paper towels, but I know packaged foods will be a challenge.
I am hitting up the Salt Lake City farmer's market Saturday morning for nice fresh produce and bread and will be planning a few meals in advance. I think at the end of the two weeks, I'll have eaten less, spent less and definitely wasted less.
